Henckels Gourmet 18-Piece High Carbon Stainless-Steel Knife Set with Block

If top-shelf Henckels knives will break your bank, you can still get high-quality performance and construction with the mid-range Henckels Gourmet line. A full-size collection, this 18-piece set thoroughly outfits a chef, as well as eight steak dinner guests. Each Gourmet knife is stamped from a single piece of high-carbon stainless steel, honed by hand, and hardened by the Friodur ice process, for maximum strength and stain-resistance. These knives boast a full tang, which is triple-riveted to a contoured handle made of Novadur polypropylene. This construction is impact-resistant, comfortable to hold, and durable. Complete with its own storage block, the set includes seven kitchen knives: a 3-inch parer, a 6-inch utility, an 8-inch carver, an 8-inch chef’s, an 8-inch bread, a 6-inch chef’s, and a 5-inch serrated utility. It also includes eight steak knives, a 9-inch steel for sharpening, and a pair of kitchen shears. The block has three extra slots for adding knives as needed. The set is safe for the dishwasher, but washing by hand is recommended. Henckels includes a lifetime warranty. --Emily Bedard

3-inch parer, 6-inch utility, 8-inch carver, 8-inch chef's, 8-inch bread, 6-inch chef's, 5-inch serrated utility, 9-inch steel, kitchen shears, 8 steak knives, and storage block

Wüsthof Gourmet 18-Piece Block Set

Representing Wüsthof’s Gourmet series of knives, this block set features less expensive versions of the knives in the manufacturer’s Classic series. Knives in the set include an 8-inch cook’s knife, an 8-inch carving knife, a 6-1/2-inch santoku, an 8-inch bread knife, a 6-inch sandwich knife, a 4-1/4-inch tomato knife, a 4-inch utility knife, a 3-inch paring knife, six 4-1/2-inch steak knives, a 6-inch kitchen fork, kitchen shears, and a 9-inch sharpening steel. Everything fits within the 17-slot rubber-footed oak block. Although the blades are still made of high-carbon steel with a stain-resistant alloy, the difference in the Gourmet series is that the blade is a thinner quality metal and is cut by a precision laser instead of by hand. The blade still has an ideal shape as it is ground and polished by computer to ensure perfect tapering from tip to bolster. Full tangs extend through the synthetic traditional-style handles, which are triple-riveted for strength. These knives are dishwasher-safe but handwashing is recommended to preserve the edges on the blades. The Gourmet series is an excellent alternative for those who want to own quality Wüsthof cutlery but are on a budget. --Cristina Vaamonde

Wusthof Grand Prix 7-Piece Block Set

Housed in a nine-slot wood block, this Grand Prix set offers Wusthof’s excellence in a highly-versatile grouping. The set includes the following knives: 2-3/4-inch narrow-bladed trimming parer; 5-inch serrated and pronged tomato knife; 6-inch all-purpose sandwich knife; and a hefty 8-inch chef’s knife for chopping, dicing, and slicing. Also included are kitchen shears and a 9-inch sharpening steel. The Grand Prix knives feature a pebble-grain synthetic handle molded over an extended tang for a sure, comfortable grip. Because the steel tang does not run the full length of the handle, a Grand Prix knife offers slightly less heft than its Classic counterpart, yet more than the trim Le Cordon Bleu. Grand Prix differs from Grand Prix II in that the latter features a more ergonomically-curved handle with a blunt end. Grand Prix handles are straighter with rounded ends.

All Grand Prix knives are precision forged from a single piece of high-carbon, stain-resistant German steel. Each blade has been impeccably honed by hand and its edge laser-tested for uniformity. An edge may be re-sharpened professionally or with a sharpening steel. Though the utensils are dishwasher-safe, Wusthof recommends washing all fine cutlery by hand. Made in Germany, the set is fully guaranteed to be free of defects in materials and/or craftsmanship. --Ann Bieri

Wüsthof Classic 3-Piece Gourmet Knife Set

The 8-inch cook's knife, an essential kitchen tool, is the centerpiece of this useful collection. It performs a wide variety of cutting tasks, from fine chopping to dicing and slicing. The relatively small size and sharp point of the set's paring knife make it ideal for handheld and other small or intricate cutting chores, such as vegetable peeling or mincing small quantities of herbs. The thin, narrow blade of the 6-inch sandwich knife plus its flared tip make it best for slicing sandwiches, meat, and fruit. A knife collection in itself, the set also makes a fine start for the cutlery collector.

Part of the Classic series, these knives represents two centuries of unexcelled Wüsthof craftsmanship. Like other cutlery in the series, they're hand-forged from a single piece of stainless steel for maximum strength; the hand-polished blades are exactingly calibrated to be hard enough to resist dulling yet soft enough to take a keen edge when they're honed or sharpened. Dishwasher-safe and with traditionally shaped, ergonomically designed handles that are triple-riveted for durability, this set bring a guaranteed lifetime of low-maintenance cutting to its owners. --Arthur Boehm

Henckels Gourmet High-Carbon Stainless Steel Steak Knives, Set of 4

From one of Henckels' moderately priced cutlery lines, these four steak knives will divide any rib-eye, chop, or roast into bite-size pieces. The thin, curved blades are perfect for precise cutting, though their fine serrations tend to tear meat fibers rather than slice neatly through them. Stamped from high-carbon stainless steel, these knives are lighter in weight than forged knives and don't have bolsters, which might not be essential when confronting a thick prime rib. The synthetic handles feature classic three-rivet styling with full tangs for strength. The knives are dishwasher-safe and they carry a lifetime warranty against defects. --Fred Brack

Henckels Gourmet 7-Inch Santoku Knife

Many chefs are choosing the santoku over the chef’s knife as their primary chopping knife. Traditionally used by Japanese chefs, the santoku chops and slices with a straight rather than a rocking motion and offers the benefits of a cleaver with the manageability of a lighter knife. As part of Henckels’s Gourmet series of knives, this santoku has a stamped, high-carbon stainless-steel blade that is laser-sharpened for a longer-lasting edge and put through the Friodur ice-hardening process for additional strength. From blade tip to tang, the knife is composed of a single piece of metal for sturdiness and is tightly secured to the hygienic polypropylene handle with three rivets. Henckels Gourmet knives are covered under a lifetime warranty. --Cristina Vaamonde

Wüsthof Classic 7-Piece Block Set

This seven-piece set gets a cutlery collection started on the right track while leaving room to add more pieces in the future. Providing excellent control for average-sized hands, the 8-inch cook’s knife performs the majority of the chopping and mincing tasks in the kitchen. The 8-inch serrated bread knife cuts through a crusty loaf with ease, while the 4-1/2-inch utility knife will become a well-loved tool for smaller cutting tasks, such as slicing garlic or fruit. Finally, the 3-1/2-inch paring knife is perfect for peeling apples or hulling strawberries. A 9-inch sharpening steel keeps knife edges sharp and a pair of kitchen shears cuts herbs, poultry, or packaging. The 17-slot oak block holds all knives with room to spare for six steak knives and five other cutlery acquisitions.

Part of Wüsthof’s popular Classic line of cutlery, these knives have a very traditional design. Blades are hand-forged from a single piece of high-carbon steel so they retain their sharp edges longer and are easier to resharpen, plus they include a stain-resistant alloy. Blades are also ground and polished by computer to ensure perfect tapering from tip to bolster. A signature feature of Wusthof knives, the weighted bolster gives these knives the perfect heft. For balance, full tangs extend through the synthetic handles and are triple-riveted for strength. --Cristina Vaamonde

Henckels Five Star 4-Piece Steak Set with Presentation Box

Because their edges are straight and not serrated, the four 4-1/2-inch steak knives in this set slice through meat fibers instead of tearing them, dividing steaks, chops, and roasts into neat bite-size pieces. They come in an attractive wood box for storing on a sideboard or in a drawer. Their blades, bolsters, and rat-tail tangs are fully forged from high-carbon stainless steel. Henckels' Five Star knives have distinctive handles molded from black polypropylene like gentle waves to fit the hand snugly and are strengthened by full rat-tail tangs. Though the knives are dishwasher-safe, they should be hand washed to protect edges. Made in Germany, the knives carry a lifetime warranty against defects. --Fred Brack

Inspired by a celebrated French design, the six 4-1/2 inch knives in this set cut steaks, chops, and roasts into bite-size pieces while imparting a hint of ornate chateau manners and crystal chandeliers. The knives have stainless-steel blades and accents on their rosewood handles. Their design was inspired by the celebrated Laguiole knife, which originated in 1829 in a French mountain village of the same name. Farmers folded the knives into their pockets. Today, Laguiole knives are made in Thiers, the French cutlery center, according to the original design. Elongated pistol-grip handles are secured by three rivets and decorated with a tiny stainless-steel bee, homage to the bee on Napoleon I's Imperial emblem. The blades' fine serrations tend to tear rather than slice precisely through steak fibers. The knives come in a wood tray for safe storage on the counter or in a drawer. --Fred Brack

Henckels 8-Piece High-Carbon Stainless-Steel Gourmet Steak Knives with Block

Removed from their slots in this set's rubber-footed wood storage block, these eight knives slice any steak, chop, or roast into bite-size pieces. Gourmet is one of Henckels's inexpensive cutlery lines. These knives don't have bolsters, but that feature isn't vital when confronting a rib eye. The high-carbon, stainless-steel 4-1/2-inch blades are stamped, not forged, and because they are serrated on the upper halves, they tend to tear meat fibers rather than slice precisely through them the way straight-edge knives do. On the other hand, the fine serrations reduce the tearing effect, and the blades' lower halves are straight. The synthetic, three-rivet, full-tang handles are classically styled. --Fred Brack
